Website and Email Down this weekend…

You may have read~ We had a devastating Outage of our Website and emails this past weekend, if you sent an email 10/25-10/27 there is a good chance that it was not received. Please re-send you email. We are sorry for any problems this may have caused.

This was a total bummer and I spent hours getting this fixed, although if I knew just a little bit more about computers it may have been faster. Its fixed and thats the important part, although I am worried that you all didn’t get responses to your emails so please re-send them. ;0)

Update~ We are still not receiving all emails and are working on this.

Come out to Whole Foods ….

Homemade Gummy Bears, yumm!

So I suppose your all wondering why the recipe kick and what about the diapers? Well our diapers are undergoing a slight design change, no worries, we’ll still have our fantastic patent pending adjustable elastic, we’re just adding a feature to make them easier to use. So keep on the look out for announcements coming soon!

Until then, with 6 kids and school starting, I have been stocking up on our favorite treats so I can add them to lunches during the week. One of our favorite treats is Gummy Bears. What I don’t love is all the corn syrup and artificial nasties you find in most store bought versions, or the organic ones cost $30 a pound. So I thought in this economy everyone wants to save money and make more things at home, so I thought you all would enjoy our recipe. There is so many versions you can make, this recipe is just a basic one.

You can use any mold you want to make cute and tasty gummy treats.

Homemade Gummy Bears

10 packets of Knox Gelatine

2 cups juice (avoid Pineapple, Kiwi, Papaya, Guava, Fig, and also Ginger Root)

1 cup Organic Sugar

1 tsp of Flavor Extract * Optional (Whole Foods has a lot of great ones)

In a medium sauce pan combine the first 3 ingredients, stir slowly over medium heat. You don’t want to wisk it up because you’ll get froth at the top.

Take a candy mold and spray lightly with non-stick spray. If you don’t have a candy mold use a 9×9 baking dish and cut them into squares, kinda like turkish delights.

Once your mixture in the pan becomes clearish and not cloudy and more its ready to add your flavor extracts if you want and then to go in the molds. Its easier to pour this into a glass measuring cup with a pour spout to pour into the molds at this point. Pour liquid into your molds up to the edge. Allow to cool on the counter top for about 30 minutes and then turn out on to a cookie sheet. Store in a plastic bag in the fridge. Of course they probably won’t last that long!

Variations

More Gummys!

Theres lots of things you can try with these like….

Substitute 1 cup of herbal tea for one of the cups of juice for a nice change. I love hibiscus.

Add a couple drops of food coloring for a brighter color( I don’t like to personally, but you might ;0)

Substitute 1/2 of cup of apple sauce or pureed fruit for 1/2 cup of juice.

Sour Gummys~ Take 1 TSP of citric acid and 1/2 cup of sugar and combine. When you pull your gummys out of the mold roll in the sour sugar for super sour gummys!

If you don’t care too much about the healthy factor use soda, Kool Aide, or anyother favorite drink in exchange for the juice. ;0)

Alternate Recipe~
1 6 oz package of Jello mix
5 packets of Knox Gelatine
1 cup of water

Follow instructions as listed. This makes a yummy, but less healthy version. ;0)

We just found out that one of our kids is allergic to gluten. This of course began a fun transition to finding gluten free foods for a very picky 12 year old. One of the biggest issues we had was finding bread that he would eat. I don’t blame him, some of those gluten free breads out there are just not much like the real thing.

In one of my numerous internet searches I found a great recipe for a simple and quick microwave bread. It turned out ok, but after some tweaking I have a bread that not only my son will eat, but even my McDonalds loving husband will eat. This is the recipe that we now love and use all the time…

Easy Peasy Gluten Free Bread

1 large egg

1 TSP molasses

2 Tbs. almond meal/flour

2 Tbs. flax meal

1 TBS Rice Flour

1 TBS Tapioca Flour

1/4 tsp. baking powder

Pinch of salt

In a small bowl whisk the egg and molasses together. Then add remaining ingredients and mix well. In a small ramekin or pyrex bowl (about 6-8 inches) spray with non-stick spray (we like olive oil the best). Heres the part thats not my favorite, your going to microwave on high for about 1 minute and 10 seconds. Now this will differ a bit depending on your microwave. Now I know microwaves aren’t the best and I haven’t had much time to play with oven baking this yet, so I will try it and we shall see. Once this is done you should be able to turn it out on a plate. Make them ahead and freeze for easy lunch bread, or eat it hot with lots of butter and honey! ENJOY!~
